American Pancakes

(Serves 4/5)


Preparation time 20 minutes

Cooking time depending on the size 4 minutes

(You want them about the diameter of a roll of sellotape)


You will need:

1tbsp Secret Chef Sugar or Spice or Winter Warmer

135g Plain Flour

1tsp Baking Powder

½ tsp Salt

1tbsp Caster Sugar

130ml Milk

1 large Egg (lightly beaten)

2tbsp melted Butter (not piping hot)


Mix in a large bowl the Flour, Baking Powder, Salt, Caster Sugar and Sugar & Spice or Winter Warmer.

In a Jug whisk the Egg and Milk and then the melted Butter.

Pour the fluid mixture over the flower mixture and beat using a fork. (any lumps will disappear with a good beating)

The batter should be quite thick. Set to one side for about 5 minutes.

Heat a large frying pan and ladle the mix in. (each pancake should be the diameter of a roll of sellotape)

If the mix is too thick to ladle loosen it down with a little milk. (but not too much)

Fry on one side for around 2 ½ minutes until the top begins to bubble.

Flip them over and cook on other side for about 1 ½ minutes.

They should be nicely golden brown and puffy.

Serve with more Sugar & Spice or Winter Warmer along with some Ice Cream/Maple Syrup.
