Aubergine & Courgette Bake

(Serves 4)

 

Preparation time 10 mins

Cooking time for complete meal 15/20 minutes

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)

 

You will need:

5 Tsp Secret Chef Bruschetta Topping (made up as instructed on the jar)

2 large Aubergine sliced lengthways 1/2 cm thick

6 large Courgette sliced lengthways 1/2 cm thick

200g grated Cheese (our preference is Gruyere)

 

Place the sliced aubergines and courgettes in a pan of boiling water for 5 seconds to blanch and make pliable.

Pat the slices dry (don't worry about being too thorough)

Spread the made up Bruschetta topping on each slice and roll.

Alternate the aubergine and courgette rolls in a deep baking dish and sprinkle with grated cheese.

Bake in the oven for 15/20 minutes.
