Cauliflower Cheese Soup

(Serves 4/5)


Preparation time 20minutes

Cooking time 30 minutes


You will need:

1 Sachet Chicken Rub

1 large Cauliflower broken into florets

1 medium Onion, diced

1litre Chicken Stock

20g Parmesan, grated

80g Mature Cheddar, grated

1tsp Oil

Himalayan Pink Salt to taste


In a large saucepan, fry the onions in the oil until soft.

Add the Chicken Rub and the Cauliflower along with the stock.

Bring to the boil and cook for approx. 20 minutes (until cauliflower is soft).

Add the cheeses and blend with a hand blender until smooth. (If the consistency is too thick for your liking, thin with a little milk or more stock.)

Salt to taste and serve with fresh bread.
