Cauliflower & Spinach Bhaji

(serves 4)

 

You will need:

1 Sachet of side dish spices from any Secret Chef 3in1 Curry Meal Kit.

1 Onion finely chopped

2 Cloves of Garlic crushed

350g Cauliflower broken into 3 to 5cm florets

200g Baby Spinach Leaves (washed and stalks removed)

3 Tomatoes roughly chopped

 Juice of ½ a small Lemon

5tbs Vegetable Oil

Salt to taste

 

Par boil the Cauliflower Florets For 8 minutes in boiling salted water.

Drain the Cauliflower and just cover with cold water to stop the cooking process, set aside.

Heat the Oil in a frying pan and stir fry the Onions for 2 minutes.                         

Add the Garlic and stir fry for 30 seconds.                                  

Add the Side Dish Spices and stir fry for 30 seconds.                                 

Add the drained cooked Cauliflower and toss to cover with the onions and spices, stir fry for 4 minutes.

                (if the spices are sticking to the pan add a little water)

Add the Spinach, stir gently and fry for 2 minutes. (try not to break up the cauliflower)

Add the Tomatoes and stir fry gently for 2 minutes.

Add the Lemon Juice and stir.
