Chicken Fajita

(Serves 4)


Preparation time 15 minutes

Marinating time ½ hour minimum but the longer the better

Cooking time 7/10 minutes


You will need:

2-4 tbs Secret Chef Mexican Seasoning (depending how hot you like it)

4 chicken breast, cut into strips

1 lime or lemon, juiced

2 red peppers, sliced

2 medium onions, sliced

Oil for frying

8 tortillas = 2 per person


Mix the lemon/lime juice with plenty of Mexican Seasoning and cover the sliced chicken to marinade out of the fridge for  ½ hour.

Heat the oil in a frying pan and fry the onions for 1 minute, add the peppers and fry for further 1 minute.

Add the chicken and fry for 5 minutes continuously stirring. Check that the chicken is properly cooked, add more Mexican Seasoning if required.

Serve with warm tortillas
