Chicken Jambalaya

(Serves 4)


Preparation time 30mins 

Cooking time 1 hour

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)


You will need:

1 Sachet Secret Chef Chicken & Veg Rub

4/6 Tsp Secret Chef Mexican Seasoning

6 Chicken Thighs

2 Mugs Rice (cooked and set aside)

1 large Onion, diced

2 Carrots, diced

1 Courgette, diced

1 Pepper, sliced

1 Tbsp Tomato Ketchup

1 Mug of Gravy

4 Tbsp Cooking Oil


Mix the cooking oil with the Chicken Rub and spread on the chicken thighs.

Place in a baking tray and cook in the hot oven for approx. 40 minutes.

Cool and tear into bite size pieces.

In a large frying pan or wok heat some oil and fry the onions and all the veg until slightly tender.

Add the chicken pieces, cooked rice, Mexican seasoning and tomato ketchup, mix well and heat through.

Add the gravy, heat up stirring constantly and serve with a nice salad of your choice.
