Chunky Vegetable Soup

(Serves 4/6)

 

Preparation time 15 minutes 

Cooking time 45 minutes

 

You will need.

2 Sachets of any Secret Chef Rub

1 large Onion, peeled & chopped

2 large Carrots, peeled & chopped

2 large Potatoes, peeled & chopped

½ Swede, peeled & chopped

1 large Leek, washed & sliced in rings

2 Litres boiling Vegetable Stock

Oil for frying

 

In a large thick bottom saucepan sweat off the onions until soft.

Add the rest of the vegetables and fry for 5 minutes, stirring all the time.

Stir in the Beef Rub and add the stock.

Bring to the boil, cover and simmer for 30+ minutes (until all of the veg is soft to your liking).

 

Check the seasoning and serve with chunks of crusty bread.
