Courgette Fritters

 

Makes 10 / 12 Fritters for a starter or 4 large as a main

  

Preparation time 20 minutes

Cooking time 5 minutes

 

You will need:

2 tbs Secret Chef Thai Seasoning

500g Courgettes

1 heaped tbsp Self Raising Flour

1 Egg, beaten

3 Spring onions, trimmed and finely sliced

1 Lime, zest finely grated

1 Garlic clove, finely chopped

Oil for frying

 

Coarsely grate the courgettes and split in to 2 batches and place in the centre of a clean towel and wring out as much excess water as possible.

The courgettes should be quite dry. Mix the flour and Thai seasoning in a bowl and whisk in the egg until smooth. Add the courgettes and remaining ingredients and mix well.

Heat a large frying pan with a couple of tablespoons of oil. When the oil is hot take a heaped tablespoon of the mixture and place into the pan, flattening it out slightly with the back of the spoon.

Repeat this action leaving space between the fritters, do not over cram the pan

Leave to cook for a couple of minutes until the fritter is brown on the bottom then flip over and cook for another couple of minutes. Place the fritters on a plate lined with kitchen paper to drain off any excess oil.

Keep warm in the oven until all fritters are cooked then serve.
