Haunch of Venison

(Serves 4/5)

  

Preparation time 20 minutes


Marinating time 24 hours

Cooking time approximately 4 hours (depending on the size)

Pre-heat the oven to 160°c

(Cooking times will vary depending on your oven, we use a fan oven)

 

You will need:

1 tbs Secret Chef All in One Game Seasoning

2 Kg Haunch of Venison Marinated for 24 hours in

1 large Onion, cut in half

2 cloves of Garlic crushed

1 bottle Red Wine (don’t worry, this will be used for the sauce, it’s not going to waste)

Mix all ingredients and cover the venison, leave marinating in fridge for 24 hours

 

After marinating you will also need:

2 tbp Secret Chef All in One Game Seasoning

50g Butter

3 Carrots, cut in half lengthways

3 large Onions, cut in quarters

 

Remove venison from the marinade and pat dry.

Bring a frying pan to good heat and seal meat on both sides.

Place the carrots in the bottom of a casserole dish.

Rub 1 tbsp of Game Seasoning over the sealed meat and place in the casserole dish.

Liberally spread the butter over the top of the meat and then sprinkle over 1 tbsp of Game Seasoning.

Place the quartered onions all around and pour over the wine from the marinade (strain out the bits).

Cover and place in the pre-heated oven to cook. Baste with the cooking fluid every 45mins.
