Mediterranean Baked Portobello Mushrooms


(Serves 4 as a starter or 2 as a main)


Serve as a starter with a fresh side salad or alternatively for a main course serve with a large portion of roasted seasonal vegetables.


Preparation time 10 minute

Cooking time 12/15 minutes

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)


You will need:

2tbs Secret Chef Bruschetta Topping (made up as instructed on side of jar)

4 large Portobello Mushrooms

50g chopped Olives and Sundried Tomatoes (optional)

200g Feta Cheese crumbled

A few leaves of torn fresh Basil to garnish


Place the Mushrooms stem up on a baking tray and spread equally with the made up Bruschetta topping.

Scatter over the olives and sundried tomatoes (optional).

Top of with the crumbled feta cheese and place in the oven for 12/15 minutes.

Garnish with the freshly torn basil leaves.
