Ratatouille

(Serves 4)

 

Preparation time 15 minutes

Cooking time 40 minutes

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)

 

You will need:

2 Tbsp Secret Chef All in One Provence Seasoning

250g Cherry Tomatoes

2  Red Onions roughly chopped

4  Cloves of Garlic crushed

1  Aubergine roughly chopped

1  large Courgette roughly chopped

2  Peppers any colour, roughly chopped

Splash of Red Wine (optional)

200ml Tomato Passata

2 tbsp Olive or Vegetable Oil

 

Put 2 tbsp oil into a deep tray or dish and add the onions. Cook in the hot oven for 10mins.

Add the garlic, courgette, aubergine and peppers and cook for a further 10mins.

Add the Provence seasoning and stir all the ingredients together, place the tomatoes on top (add wine – optional). Cook for further 10mins.

Stir in the passata and cook for further 10mins.
