Smoked Sea Salt Chocolate Truffles


Makes about 30 truffles depending on size

Chilling time 1-2 hours


You will need:

170g Dark Chocolate

¼ tsp of Secret Chef Smoked Sea Salt (don’t make them too salty)

30g Butter

100ml Double Cream

25g Caster Sugar

1 tbs Cocoa Powder

½ tsp Icing Sugar


Break up the chocolate and chop very finely with a knife or food processor and put into mixing bowl along with the butter.

Pour the cream, smoked sea salt and sugar in to a saucepan, bring just to the boil and remove from heat.

Pour half the cream mixture onto the chocolate and butter and mix until chocolate melts; add the other half of the cream mixture and beat until it is smooth and shiny.

Refrigerate for an hour or two, until firm enough to shape.

Mix the cocoa and icing sugar together, dust hands with mixture and roll the mixture into truffle shapes.

Remove the grinder top from the smoked sea salt, dampen your finger with water or better rum and dab the top of each truffle and put a pinch of smoked sea salt on top of each truffle

Chill until time to serve.
