Spicy Hot Smoked Pollock

 

(1 large fillet serves 4 as a starter or 2 as a main)

 

Preparation time 5 minutes

Cooking time 15 minutes

Pre-heat BBQ and get the Rosemary smouldering

(2 large hand full’s / branches)


You will need:

2tsp Secret Chef Mexican or Moroccan Seasoning  (for 1 large fillet)

Pollock fillet skin still on (1 large fillet serves 4 as a starter or 2 as a main)

2 large handfuls’s / branches of rosemary placed on top of hot BBQ rack.

 

Place the fillets on to tin foil and rub in your choice of seasoning.

Place the fillets hi up on the BBQ away from the direct heat and close lid.

Ensure the rosemary is smouldering throughout the cooking period.

(Do not allow to catch fire only smoulder).

Cook for around 15 minutes ensure the fish is cooked throughout but

do not overcook and dry out.

 

Serve with salads and new potatoes.
