Spicy Pumpkin Soup

(Serves 4/6)

  

Preparation time 10 minutes

Cooking time 35 minutes

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)

 

You will need:

1-2 tbs Secret Chef All in One Mexican Seasoning

(depending on how spicy you like it)

1 medium large Pumpkin/Butternut Squash peeled and cut into wedges

1 large Onion, peeled and cut into quarters

2 Cloves Garlic, peeled

850ml Chicken or Vegetable Stock

150ml Double Cream

Sea Salt to taste

1Tbsp Cooking Oil

 

Mix the pumpkin, onion, garlic, oil and Mexican seasoning together and

place on baking tray.
Cook in the hot oven for 30 minutes, shaking it half way through.

Bring the stock to boil, add the cooked vegetables and blend until smooth.

Stir in the double cream and season with salt and Mexican seasoning to taste.

Serve with chunks of fresh bread.
