Sweet Potato & Butternut Squash Soup

 

(Serves 4/5)

 

Preparation time 20mins

Cooking time 50 minutes

Pre-heat the oven to 190°c

(Cooking times will vary depending on your oven, we use a fan oven)

 

You will need:

2 sachets of Secret Chef Lamb

1 large Butternut Squash quartered lengthways and deseeded

2 large Sweet Potatoes peeled and cut into large chunks

1 large Onion peeled and quartered

3 Garlic Cloves peeled

2 pints of Stock (chicken or vegetable)

100ml Double Cream

2 Tbs Oil

 

Place the butternut squash and sweet potatoes onto a baking tray, drizzle with oil and sprinkle over one of the sachets of the Lamb Rub, cook in the oven for 20 mins.

Add the onion and garlic to the tray and cook for further 20mins.

Using a spoon, remove the flesh from the skin of the butternut squash.

Put all of the cooked vegetables into a saucepan, along with the stock and blend.

Add the cream and the other sachet of the Lamb Rub and blend again.

Simmer for 10mins and serve
