Vegetable & Beef Casserole

(Serves 4/6)

 

Preparation time 15 minutes 

Cooking time 1 hour 45 minutes

 

You will need:

1 sachet Secret Chef Beef Rub

1-2 tbs Secret Chef Bruschetta Topping

500g braising steak, diced

1 Large Carrot sliced

1 Leek sliced

2 large Potatoes diced

1 large Onion sliced

750ml Beef Stock

2tbs Plain Flour

A little oil for frying

 

Heat a little oil in a casserole pan or large saucepan and add the Carrot, leek, Potato & Onion and cook gently for 5 minutes.

Remove the vegetables from the pan.

Heat a little more oil in the pan and brown off the meat (A little at a time as to seal and not poach)

Once all the beef is browned add all the beef to the pan and stir in the flour and beef rub mixing in well.

Add the cooked vegetables and stir well.

Pour over the Stock and cook gently for 1½ hours.

Stir in 1 - 2 tbs of Dried Bruschetta topping to thicken.

 

For best flavours this dish is best cooked a day in advance.
