Smoked Peppercorns

These peppercorns have been smoked in Cornwall over oak chippings using a traditional cold smoke method.

Use these smoked peppercorns anywhere black pepper is used

 to add a smokey flavour to your dish.

 

We find they pair especially well with meat or cheese dishes along with

Tex-Mex cousins. Also try grinding over fresh salads and vegetables.

Madagascan Black Peppercorns

Peppercorns are native to South India and are the berries of a tropical evergreen vine.

They are picked when still green and then dried in the sun until they turn black. They have a warming taste and a distinctive aroma.

Green Peppercorns

The flavour of green peppercorns is fresh, slightly fruity & mildly hot with a light aroma.

As soon as they are harvested from a Tropical Evergreen Vine, the green peppercorns are plunged into boiling water to preserve its vibrant colour before drying in the sun.

 

Use in Salads, Sauces, Vegetable, Duck & Game Dishes.

 

Can be used as a substitute for brined green peppercorns by rehydrating in hot water for 1 hour.

Long peppercorns have a sweet & fragrant aroma with a bitingly hot and lingering flavour.

Long Peppercorns are native to Indonesia & look like catkins.

The pepper vines grow wild & farmers encourage them to grow up their cashew and cocoa trees.

Perfect with Indonesian, North African and Ethiopian Dishes.

Paradise Peppercorns

The taste is initially piney & peppery with an excitingly hot and tingling sensation.

Native to West Africa and also know as Grains of Paradise, technically not a peppercorn

but the seed from a plant related to the ginger and cardamom family.

They were used for many years as a pepper substitute.

Sichuan Peppercorns have a lemony aroma with a unique sharp peppery flavour.

Sichuan Peppercorns take their name from a region of China.

Technically not peppercorns but berries from a type of Ash tree.

Pink Peppercorns (aka Red Peppercorns) are native to South America

Himalayan Pink Salt is a pure, hand-mined salt found naturally deep

inside the Himalayan Mountains.

 

This 250 million year old, crystal salt was created from the primal seas before the Himalayas where created. Dried by the sun at a time where pollution did not exist.

 

It has a delicate and slightly sweet taste with plenty of flavour and is ideal for

everyday seasoning.

It is also known for its healing properties. But most of all it tastes great!

Smoked Sea Salt

We have changed the packaging of our smoked sea salt from a grinder to a sprinkler for a more intense flavour.

By smoking smaller salt crystals more surface area is covered giving a more

intense smoky flavour. We still use the same smoking process the only difference is the

size of salt grain along with being packed in a shaker not a grinder.

 

The salt has been harvested from the slow solar evaporation of sea water and using traditional smoking methods it is cold smoked over Oak & Apple Wood.

 

This is an ideal finishing salt for meat, fish, vegetables & salads.

Why not try sprinkling a little over chocolate mousse!

Harvested from the solar evaporation of sea water this Sea Salt is a more

natural alternative to refined table salt.

Our natural Sea Salt is produced from the low waters of the Mediterranean Sea.

This Sea Salt is a more natural alternative to refined table salt.

 

The salt pans are filled with seawater in the spring and left to evaporate, using the heat of the Mediterranean sun and the strong African winds. Harvesting takes place once the water has evaporated, then the salt is crushed without any further refining.

 

This salt has a delicate taste and plenty of flavour, without being too strong or salty. This sea salt is wonderful on salads, vegetables and fish or used to finish roasts and sauces.

Sel Gris de Guérande

This French (Breton) Sea Salt is harvested & sifted by hand, using traditional Celtic methods. Its mild flavour and soft crunch makes it ideal as a finishing salt or for topping breads. Add to Casseroles, Roasts, Vegetables and Fish Dishes.

As the coast of Brittany does not receive such intensive sun as the Mediterranean, this salt is harvested while it is still moist. Its grey colour comes from the clay of the salt pans.
